If you’re looking for an authentic Montana experience, it starts with what’s on your plate. At The Meadows on Rock Creek, garden-to-table isn’t just a culinary trend, it’s a commitment to flavor, sustainability, and connection. Our food philosophy is rooted in the belief that ingredients taste best when they come directly from the land that surrounds us.
From our greenhouse and working cattle ranch to wild-foraged ingredients and locally sourced produce, every bite is a reflection of Big Sky Country.
Our Greenhouse: Growing with the Seasons
Our on-site greenhouse is the heart of our garden-to-table dining experience. Built for year-round growing, it supplies a variety of vegetables, herbs, and greens used daily in meals during our all-inclusive season (Memorial Day through October).
What We Grow:
Early season: arugula, spinach, radishes, green onions, and fresh herbs
Mid-to-late summer: heirloom tomatoes, bell peppers, squash, cucumbers
Fall: kale, carrots, beets, chard, and other hearty produce
By growing our own ingredients, we reduce food miles and increase freshness. Every salad, side, and garnish reflects what’s thriving in our greenhouse, ensuring our meals remain seasonal, sustainable, and deeply flavorful.
From Pasture to Plate: Our Working Ranch
Beyond the greenhouse lies our working cattle operation, which plays a key role in the proteins featured throughout your stay. We proudly raise our own grass-fed cattle on property, ensuring humane practices, nutrient-rich meat, and an unbroken chain of quality from pasture to plate.
In addition to ranch-raised beef, our menus often feature:
Locally harvested Rocky Mountain elk and venison
Slow-braised bison short ribs
Wild-caught salmon and trout
Free-range poultry sourced regionally
Every cut is chosen with care, seasoned with intention, and cooked to highlight the richness of Montana’s natural bounty.
Wild Montana Flavors You Can Taste
Big Sky Country offers more than scenery, it offers ingredients that are entirely unique to the region. Our kitchen often includes wild and local elements that deepen the garden-to-table experience.
Local ingredients you might find in your dish:
Fresh-picked huckleberries (a regional treasure)
Wild mushrooms foraged from nearby forests
Local honey
Feta and artisan cheese from Montana creameries
Seasonal vegetables sourced from our greenhouse and neighboring growers
Paired with craft beer and locally selected wines, each meal becomes a celebration of Big Sky Country, on your plate and in your glass.
The Daily Rhythm: What Guests Can Expect
The garden-to-table experience is woven into every moment at The Meadows, with three chef-prepared meals included daily:
Breakfast: Start the day with fresh-brewed coffee and warm, filling dishes like elk sausage biscuits, huckleberry pancakes, or the signature Cowboy Breakfast.
Lunch: Light yet energizing meals are served in the Hideaway Lodge, like arugula salad with strawberries and feta, or house-made paninis using greenhouse veggies.
Dinner: A multi-course experience featuring regional meats, seasonal sides, and desserts like s’mores crème brûlée or wild berry cheesecake.
Menus rotate daily based on what’s fresh and in-season.
Why Garden-to-Table Matters at The Meadows
The garden-to-table philosophy isn’t just about flavor, it’s about integrity. It’s about honoring Montana’s land by growing and sourcing food responsibly, cooking with intention, and creating moments of connection over shared meals. In every dish, we aim to showcase the richness of this region and the care that goes into cultivating it.
