Our Greenhouse: Growing with the Seasons

Our on-site greenhouse is the heart of our garden-to-table dining experience. Built for year-round growing, it supplies a variety of vegetables, herbs, and greens used daily in meals during our all-inclusive season (Memorial Day through October).

What We Grow:

  • Early season: arugula, spinach, radishes, green onions, and fresh herbs

  • Mid-to-late summer: heirloom tomatoes, bell peppers, squash, cucumbers

  • Fall: kale, carrots, beets, chard, and other hearty produce

By growing our own ingredients, we reduce food miles and increase freshness. Every salad, side, and garnish reflects what’s thriving in our greenhouse, ensuring our meals remain seasonal, sustainable, and deeply flavorful.

From Pasture to Plate: Our Working Ranch

Beyond the greenhouse lies our working cattle operation, which plays a key role in the proteins featured throughout your stay. We proudly raise our own grass-fed cattle on property, ensuring humane practices, nutrient-rich meat, and an unbroken chain of quality from pasture to plate.

In addition to ranch-raised beef, our menus often feature:

  • Locally harvested Rocky Mountain elk and venison
